Ingredients For eggs benedict

  • 4
    english muffin halves
  • 2 Tbsp
    butter
  • 4 slice
    ham or canadian bacon or 8 slices bacon, cooked
  • 4
    eggs
  • 2
    egg yolks
  • 2 1/2 - 3 Tbsp
    lemon juice
  • 1/2 c
    cold butter ( do not cut up)
  • 1
    avocado (optional)
  • 2 Tbsp
    sour cream (optional)

How To Make eggs benedict

  • 1
    Butter muffin halves and toast under broiler.
  • 2
    Fry ham or bacon.
  • 3
    Poach eggs.
  • 4
    Put ham or bacon on muffin and top with poached egg.
  • 5
    For Hollandiase Sauce. Combine egg yolks and lemon juice in small saucepan. Mix briskly.

    Add cube of butter whole do not cut up. Cook over low heat, stirring constantly until thickened.

    Spoon Hollandaise over each serving
  • 8
    For an extra treat top each egg with a spoonful of mashed avocado mixed with sour cream.
