This is a after Easter egg hunt favorite. Great way to use up left over Easter Eggs. We always have it Easter morning because it is quick, easy and very good.

Ingredients For egg salad

  • 6 lg
    eggs, hard boiled and chopped
  • 1/2 c
    chopped pimento stuffed olives
  • 1/2 sm
    onion fine chopped
  • 1/4 c
    mayonaise or to desired consistency

How To Make egg salad

  • 1
    Place all ingredients in bowel. Mix well adjust the mayonnaise to desired consistency for sandwiches. Chill.

    Serve on Toasted bread, Bun, Crackers or bed of lettuce. Enjoy.
