Egg Salad has always been one of my favorites. Here's a recipe that is not only simple, but tasty as well. It can be served by itself or on bread. I choose gluten-free bread or on top of a romaine lettuce leaf.

Ingredients For egg salad

4hard boiled eggs

1/4 cmayonnaise
-
1/4 ccelery, chopped

1 tspyellow mustard
-
salt, to taste
-
pepper, to taste
-
parsley, dill or green onion, handful
How To Make egg salad

1Boil eggs, let cool, peel and chop. Set aside.

2In a medium bowl, mix together mayonnaise and mustard.

3Add chopped celery and mix well.

4Gently add chopped eggs, salt, pepper and handful of parsley, dill or green onion.

5*Serve on bread, romaine lettuce leaves or by itself. Enjoy!
