These aren't your ordinary muffins! They're made with plenty of eggs, a little milk, cheese, spinach, tomato, basil, (or whatever your liking) & only a little flour, spooned into muffin cups. Mmmmmmmm!

Ingredients For egg muffins

9 lgeggs

1/2 cspinach, fresh, chopped

1/3 cmilk

1/3 cflour
-
1/4 ccheddar cheese, shredded

1 Tbspbasil, fresh, chopped

1 smtomato, chopped

1/2 tspsalt & pepper
How To Make egg muffins

1Preheat oven to 350 degrees F.

2Break the eggs into a bowl & whisk. Add the rest of your ingredients & mix it all together.

3Add spoonfuls of the mixture to a nonstick muffin tin or a tin sprayed with nonstick coating. I used a 1/4 C measuring cup to transfer the mixture. Pop them in the oven & bake for 25 - 30 minutes, or until done.

4NOTE: The possibilites are endless! You can also add... Green pepper, Mushrooms, Onions, Bacon, Sausage or whatever else you'd like!
