egg essentials: egg salad tower on rye

I served this to my houseguests on Easter Sunday morning. It was a different approach to a typical breakfast. This is a fun recipe to make, and it can either be assembled as a tower (for maximum presentation), or just as a humble sandwich… it is up to you. So, you ready… Let’s get into the kitchen.

Ingredients For egg essentials: egg salad tower on rye

  • PLAN/PURCHASE
  • 2 lg
    eggs, medium/hard boiled
  • 3 slice
    bacon, uncured variety, chopped
  • 1 slice
    rye bread
  • 2 Tbsp
    mayonnaise, plain variety
  • 1 Tbsp
    sweet relish
  • 2 tsp
    brown mustard, i prefer grey poupon
  • 1 pinch
    sweet paprika
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • fresh lettuce, i prefer rocket, frisee, or arugula

How To Make egg essentials: egg salad tower on rye

    PREP/PREPARE

    Gather your Ingredients (mise en place).

    Place the eggs into a pot of cool water.
  • 4
    Bring up to the boil, then remove from the heat, cover, and let stand in the hot water for 9 minutes.

    Run the eggs under cold water, peel, and reserve.
  • 6
    Place the bacon into a skillet over medium-low heat.
  • 7
    Slowly cook the bacon until it begins to crisp, about 7 - 10 minutes.

    Remove from the skillet, drain on paper towels, and reserve.

    Cut the rye bread into small cubes.

    Remove all but 1 tablespoon of bacon grease from the skillet, increase the temperature to medium, and add the bread cubes.

    Toss in the hot skillet, until nicely browned, about 4 – 6 minutes, and reserve.

    Add the egg, mayonnaise, relish, mustard, paprika, salt, and pepper, to a small bowl, and use a fork to mix the ingredients.

    Do not break up the eggs too much; just enough to combine with the other ingredients.

    Chef’s Note: Do a final testing for proper seasoning.

    Add enough cubed bread to cover the bottom of the ring.

    Add a few leaves of lettuce.

    Add about 2 – 3 tablespoons of the egg salad.

    Cover with some chopped bacon, and press down.

    Add some lettuce to a plate, remove the ring, and sprinkle with some additional bread cubes, and bacon. Enjoy.
