This is a super quick and easy, healthy breakfast, you can even take with you when you're on the go! Prep your ingredients the night before and this literally takes about 2 minutes to make!

Ingredients For easy, healthy breakfast burrito

1whole wheat flour tortilla

1-2eggs, beaten
-
2 Tbspdiced, fresh tomato

1green onion, sliced

1 slicepart skim mozzarella cheese

spring greens or baby spinach leaves
How To Make easy, healthy breakfast burrito

1Spray a nonstick skillet with butter flavor cooking spray or heat 2 tsp. olive oil over medium high heat.

2Add salt & pepper to eggs, beat until whites and yolks are well combined.

3Scramble Eggs.

4Place tortilla on plate in microwave and place slice of cheese on top. Microwave on high for 25 seconds.

5Sprinkle with tomato, green onion, and eggs. Layer spring greens on top.

6Fold over ends of tortilla and wrap tightly burrito fashion.
