I have dreams of someday opening a Bed and Breakfast. I have collected some great breakfast dishes preparing for that someday. Some I have eaten at B&B's around the country. This particular recipe came from a B&B in Northern Vermont that we visited in the fall of 2001 when the colors were in full bloom.

Ingredients For easy cheesy brunch casserole

4 slicewhite sandwich bread

1 mdonion, chopped

1 cfresh mushrooms, sliced

2 Tbspbutter,unsalted

1 ccooked ham, chopped
-
1 ccheddar cheese, shredded
-
1 cswiss cheese, shredded
-
1 Tbspall purpose flour
-
1 1/4 cmilk
-
6 lgeggs, beaten
-
1 Tbspdry mustard, i prefer coleman's

1/4 tspgarlic powder with parsley
-
parsley for garnish
How To Make easy cheesy brunch casserole

1Place bread slices in the bottom of a lightly greased 8 inch square baking dish; set aside.

2Saute` onion and mushrooms in butter until tender; spoon evenly over bread. Top with ham.

3Combine cheeses and flour; sprinkle over ham.

4Combine milk, eggs, dry mustard and garlic powder; pour over cheese. Cover and chill 8 hours.

5Remove from refrigerator and let stand for 30 minutes. Bake at 375-degrees for 35 minutes or until set.

6Let stand for 10 minutes before serving. Garnish with parsley.
