easy asiago grits and egg breakfast bowl

This one of my favorite quick and easy breakfasts. It has layers of savory flavors and textures, and is quick and easy to prepare. I prefer the egg to be "over easy," but you may fry the egg with the yolk broken, if you prefer.

Ingredients For easy asiago grits and egg breakfast bowl

  • 1 pkg
    butter flavor instant grits (i prefer kroger brand)
  • 1 c
    water, boiling (will not use all)
  • a pinch
    black truffle salt (or sea salt)
  • 1 tsp
    butter
  • 1 lg
    egg
  • 1 Tbsp
    freshly grated asiago cheese
  • 2 tsp
    hickory smoked bacon bits, divided
  • 1 pinch
    shredded cheddar cheese for garnish (optional)
  • 1/2-1 tsp
    chives
  • black truffle salt to taste (or sea salt)
  • black pepper, if desired (i don't)

How To Make easy asiago grits and egg breakfast bowl

  • Ingredients for asiago grits breakfast bowl.

    Prep Work: Gather ingredients. Shred cheeses. Wash, dry and snip chives.
  • Boiling water in pyrex measuring cup.

    Add 1 cup water to microwave safe liquid measuring cup; microwave, on high power until boiling, about 3 1/2 minutes.
  • Bowl of grits, truffle salt and measuring cup with water.

    Empty package of grits into heatproof bowl; add pinch of truffle salt or sea salt (truffle salt highly recommended.)
  • Boiling water added to bowl of grits.

    Pour about 1/3 to 1/2 of the boiling water into grits, quickly stirring to avoid lumps. If lumps occur, keep stirring, pressing lumps against side of bowl until they disappear. Add about one teaspoon of water, at a time, as the grits thicken. (You will not use all of the boiling water.) The grits should be the consistency of a rather thick pudding before you fry the egg.
  • Skillet with melted butter.

    Place small nonstick skillet over medium heat. Add butter; let melt, then swirl to coat bottom of skillet.
  • Fried egg in skillet, before flipping.

    Turn heat up to slightly higher than medium. Crack an egg (or two, for hearty appetite) into skillet; fry for approximately 3 minutes, until white of egg is mostly cooked, then carefully flip egg over in the skillet and shut off heat.

    Working quickly, stir grits and add enough water, a few drops at a time, to bring them to the consistency of pudding.
  • Bowl of grits sprinkled with cheese and bacon bits.

    Sprinkle grits with half of the asiago cheese and half of the bacon bits.
  • Sliding egg, out of skillet, onto bowl of grits.

    Slide egg, out of skillet, onto the grits. Quickly sprinkle with remaining cheeses, bacon bits and chives. Season with salt and pepper, as desired. (Careful on the salt.)
