donny & stephanies healthy lumberjack breakfast
I love to cook but since my husband died and my children are all grown I really missed it...Now I cook for anybody that likes to eat. I have 3 children with spouses and 7 grandchildren adding more. I love holidays so I can cook and make treats for everybody, even my church friends and brothers and sisters. When I saw this contest for the best breakfast recipe I thought about this one. This recipe was made for my son and daughter in law. He and his wife have been going to the gym and watching what they eat this past year. They won't eat out anymore because the food was killing them. We have experimented with all kind of spices and have come up with some pretty good recipes thats good and healthy for them and myself as well. My son is a big guy and likes to eat hearty. He started out weighing around 350 pounds but with his height at 6'6 he didn't look bad but he felt bad. His wife is a short 5'2 and weighed 200 to start..In 11 short months of working out around 3-4 times a week and watching what they ate (not how much)my son has lost 100 pounds and Stephanie has lost 50 pds and they look and feel great. If you just pick the right foods and watch out for fats and junk food,and couple that with exercise, you can eat as much as you want and not ever get hungry. My son is off Diabetes meds and High Blood Pressure meds completely and I am coming off of mine. I think that is awesome. I hope I can post some of our recipes that will help someone else and they will enjoy their diet so much more. And you will actually WANT to work out because you will feel better.

1 mdgreen pepper / halved and chopped (save other half for potatoes)

1 mdred bell pepper / halved and chopped ( save other half for potatoes

1 mdwhite onion / halved and chopped ( save other half for potatoes

1 pkgham /chopped fine

6 slicepre cooked bacon / sausage optional

1 tspsalt , pepper, and tiger seasoning

1 pkgsharp shredded cheese (low fat)

1bag southern style frozen hashbrowns
-
1/2green bell pepper ( saved from above)
-
1/2red bell pepper (saved from above)
-
1/2onion ( saved from above)
-
1 tspsalt and pepper (more if needed to your taste)

1 tsptiger seasoning ( more if needed to your taste)

1 ccanola oil
- IF YOU WANT TO MAKE THE OMELET INTO A SANDWICH TRY USING PEPPERRIDGE FARMS OR ARNOLDS (HIGH FIBER) BREAD . IT MAKES A LARGER SANDWICH AND HAS MORE TEXTURE AND SUBSTANCE THAN OTHER BREADS. AND ITS SO GOOD AND GOOD FOR YOU.

1To prepare egg omelets: Heat a 13 in non stick skillet on low and spray with Pam .Take 8 fresh eggs and beat in a mixing bowl, add the peppers, ham and seasonings, stir together, saving bacon and cheese until mixture has started cooking and just before done. Pour 1/2 of egg mixture into heated pan and let cook on low swirling the pan to make eggs cover the pan. Cook about 7-10 mins or until eggs are starting to get done all over, then sprinkle 1 cup of the cheese all over the eggs and lay the bacon three strips down one side. Flip one side of egg over the other side and remove from pan onto plate to let cheese melt then spray the pan again and repeat recipe for second omelet.

2To prepare Hashbrowns Heat a 13 in non stick skillet on med/high Pour 1/2 cup of canola oil in skillet.( you can use more if needed later) Mix together thawed hashbrown style potatoes, peppers, onion, and seasonings. Pour into heated oil and cook on med/high for 20 -30 mins or until they start browning and flip them over a little at a time to brown on the other side. After they are brown add a lid and let them cook on low 5-10 mins. Serve along side of the toast,lettuce,tomato and egg omelet. Add orange slices, strawberries,cantalope slices, etc. around plate for a colorful and healthy dish.

3You can also add other veggies to your eggs or hashbrowns such as mushrooms,tomatoes,etc. Also you may want to start the hashbrowns before the egg omelet because it will take a little longer for them. Leave your frozen hashbrowns out in the fridge overnight so they will be thawed. Prep time should be no more than 15-20 minutes and cook time no longer than 30-35 mins
