Ingredients For denver omelette

1 Tbspolive oil

1/4 cfinely chopped onion

1/2red pepper, finely diced

1/2green pepper, finely diced

5 slicelean ham, chopped (about 4 ounces)

4whole eggs

4egg whites
-
2 Tbspcool water

2 Tbspbutter

1/2 cshredded white cheddar cheese

salt and pepper, to taste
How To Make denver omelette

1Heat olive oil in a skillet over medium heat. Add onion and peppers. Cook over medium heat for 4-5 minutes or until the vegetables start browning on the edges. Add ham and cook for another 1-2 minutes. Remove from the heat, cover, and keep warm.

2Whisk eggs, egg whites and water.

3Heat 1 tablespoon of butter in an 8-inch non-stick skillet over medium-low heat. Add half the egg mixture to the pan. Cover the pan and cook until the eggs are set, approximately 2-3 minutes. Add 1/4 cup cheese, turn off the burner, and allow the cheese to melt. Add half the veggies and fold the omelette closed, bringing one side over the other.
