Yum! This is a delicious, clean egg scramble breakfast to start your day with. The spices and fresh veggies give the Spanish vibe with a small kick. Combining the egg and veggies is tasty on its own, but the sliced avocado on top makes this scramble special. Sprinkled with fresh cilantro, salt, and pepper, this recipe makes clean eating such a treat.

Ingredients For clean & healthy spanish scramble

1/4 cdiced red bell pepper

1/4 cdiced green bell pepper

1green onion, chopped
-
1 Tbspchopped cilantro

1/2avocado
-
2 dashcayenne
-
1/4 tspcumin

1/4 tspchili powder

1egg
-
1/2 Tbspolive or coconut oil

1 dashKosher salt

1 dashblack pepper
How To Make clean & healthy spanish scramble

1Dice and chop peppers, onion, and cilantro.

2Slice avocado and set aside.

3Scramble egg and add all seasonings. Set aside.

4Put coconut or olive oil in small saute pan and heat. Saute peppers, onions and half cilantro in oil.

5Pour egg over saute mixture in pan. Stir until eggs are cooked.

6Put onto a plate, add sliced avocado on top, and garnish with remaining cilantro.
