I am not big on breakfast BUT when i do eat breakfast...this is my favorite. Alot of resaurants feature it on there breakfast menu down in these parts but it is very easy to make at home and everything you need to make this can easily be found at any supermarket.

Ingredients For chilaquiles

3-4 Tbsplard or vegetable oil

6stale corn tortillas, broken or cut into strips

6eggs, beaten

1/2 cchopped onion
-
1/2 ccanned green chilies, chopped

1/2 tspsalt

1 cshre longhorn or cheddar cheese
How To Make chilaquiles

1heat lard or oul over high heat in a large frying pan.

2When oil is hot, fry tortillas until crisp. Drain on paper towels.

3Combine eggs, onion,chilies, and salt.

4Stir in the tortilla chips or strips. Cook until almost set, add cheese, and continue cooking until cheese melts and eggs are firm.
