Ingredients For chicken and mozzarella frittata

  • 2 Tbsp
    olive oil
  • 2 lg
    boneless skinless chicken breasts, cut into chunks
  • 1 tsp
    salt
  • 1 tsp
    paprika
  • 1 tsp
    oregano
  • 1/2 tsp
    black pepper
  • 2 sm
    shallots, minced
  • 3 clove
    garlic, minced
  • 3 lg
    eggs
  • 2/3 c
    heavy cream
  • 1 c
    shredded mozzarella cheese
  • parsley, for garnish

How To Make chicken and mozzarella frittata

    Preheat oven 350 degrees Place olive oil in the a oven safe skillet. Add the chicken cubes. Season with salt, paprika, oregano and pepper. Cook about 5 minutes. Add the shallots and garlic. Cook until the shallots are tender.

    Whip the eggs with the heavy cream. Pour over the chicken and stir. Top with mozzarella cheese and place in the oven.

    Bake for about 15 minutes, until the eggs are set and the cheese has melted. Garnish with parsley.
