Ingredients For cheesy veggie eggs

1 1/2 cfrozen broccoli, cauliflower and carrot mix

6eggs

2 Tbspmilk
-
1/4 tspsalt

1/4 tspbasil, dried

1/8 tspblack pepper
-
1 Tbspbutter or margarine

1/4 cgreen onion, sliced

2 ozmild cheddar cheese, shredded
How To Make cheesy veggie eggs

1Cook vegetables as directed on package; drain. Keep warm.

2In medium bowl, combine eggs, milk, salt, basil and pepper; beat well.

3In medium skillet, over medium-high heat, melt butter or margarine. Add onions; saute for 1-2 minutes or until tender. Reduce heat to low; add egg mixture. Cook until eggs are set but still moist, stirring occasionally from outside edge to center of pan.

4Stir in warm vegetables; sprinkle with cheese. Cover; cook 2-3 minutes longer or until cheese is melted.
