A cheese latke instead of potato. We use these as a breakfast item or a snack. Cook time really depends on the size of your skillet. This makes 14 latkes.

Ingredients For cheese and raisin latkes

2 lgeggs, separated

1/4 cwater

2 Tbspsugar

1 tspsalt

2 csmall-curd cottage cheese

3/4 call-purpose flour

1/2 craisins
-
vegetable oil
How To Make cheese and raisin latkes

1Combine the egg yolks, water, sugar, and salt in a medium bowl; beat with a wire whisk until blended.

2Stir in the cottage cheese. Add the flour and raisins; stir well.

3Beat the egg whites at high speed of an electric mixer until stiff peaks form. Gently fold into the cheese mixture.

4Pour oil to a depth of 1/8 inch into a large heavy skillet. For each latke, drop 1/4 cup mixture into the hot oil. Fry until golden, turning once. Drain, and serve warm.
