My sister lives in Idaho where camping can be a way of life. There's plenty of outdoor recreation, such as: hunting, fishing, snow mobiling, skiing, as well as camping. Recipes are written for the campfire, but are easily adapted to our kitchens. They are less fussy and often served right out of the cooking vessel.

Ingredients For camping~easy breakfast

1 potato per person and one for the pot, cut into 1/4 inch cubes

1 lbbacon, cut in 1 inch pieces

1onion chopped
-
salt and pepper to taste

2eggs per person
-
ketsup or tabasco, if desired
How To Make camping~easy breakfast

112" Dutch Oven. Fry bacon in Dutch oven. Add onion and saute`. Add diced potatoes, cut into 1/4 inch cubes and fry in oven until brown and tender. Season to taste. Crack eggs over top of mixture. Remove from heat. Cover Dutch oven with lid, then cover the lid with hot coals. Bake 5 to 7 minutes until eggs are cooked to your liking.
