I had something similar at a restaurant and had to make it again - it is a great spin on the traditional eggs benedict.

    english muffins
  • 4
    poached eggs
  • 1 pkg
    hollandaise sauce mix
  • 8
    strips of turkey bacon
  • fresh salsa*

How To Make california eggs benedict

    Cook bacon, poach eggs, follow directions to prepare hollandaise sauce, and toast English muffins.

    Slice avocado into thin pieces.

    Place avocado, then bacon, then poached egg on top of English muffin.

    Pour hollandaise sauce over egg and then sprinkle fresh salsa* on the top. Sprinkle a little basil or parsley on top for look. *to make your own fresh salsa dice tomato, orange bell pepper, garlic, red onion, and green onion; add a little fresh lime juice
