Ingredients For brunch enchiladas

2 Tbspolive oil

3/4 cmilk

1/2 ccolby cheese, grated

1/4 cwhite flour
-
2 Tbspbutter
-
"just a pinch" of pepper

"just a pinch" of salt

1 smdiced onion
-
2eggs
-
1 cham, diced
-
salsa
How To Make brunch enchiladas

1Saute ham and onion in olive oil.

2Add eggs and scramble.

3In small pan, heat butter and whisk in flour.

4Slowly add milk while whisking.

5Heat until thickened and bubbly.

6Salt and pepper to taste.

7Heat tortillas on a griddle until soft and pliable, but do not allow to harden.

8Divide the egg mixture into three tortillas and roll.

9Pour the white sauce over and top with cheese.

10Serve with salsa on the side.
