I named this lovely dish breakfast surprise, because when I looked in the fridge I couldn't decide what I wanted to make. I threw a few things together and was very pleased and surprised with the results. Pan fry the eggs to your preference and lightly salt and pepper if desired. I hope you will enjoy this quick and easy to make dish.

Ingredients For breakfast surprise

    7 grain salad
  • 1
    avocado, peeled and sliced
  • 1/4 c
    crumbled feta cheese
  • 8
    cherry tomatoes, quartered
  • 1 Tbsp
    fresh basil, thinly sliced
  • 2 lg
    eggs, pan fried
  • 1/4 tsp
    fine sea salt
  • 1/8 tsp
    freshly ground black pepper
  • 1
    green onion, thinly sliced

How To Make breakfast surprise

    This recipe serves two. Divide everything equally for a satisfying and filling meal.

    Place 1/2 cup of 7 grain salad on each plate. Spread it out a little. Next add half the avocado slices on top of each plate. Now add the crumbled feta on top of the avocado slices. Divide the cherry tomatoes in half and add on top of the avocado slices. Sprinkle the sliced basil over the tomatoes. Add the beautiful fried egg on top of the tomatoes and garnish with the green onions.

    Serve a slice of warm bread on the side to mop up the runny egg. Enjoy!
