omelette tortilla roll-ups
This quick breakfast sandwich is making the rounds on social media, so I thought I’d try it out for myself. Wow! Quick an delicious! Of course, I had to give it my own spin. Full Disclosure: The listed timing of 10 minutes, start to finish, is for a basic version with eggs and shredded cheese. I heated up some precooked bacon, sautéed a diced tomato in the hot skillet before adding the scrambled egg mixture, so the version in the photo took about 15 minutes total. Yes, you could use a knife & fork to eat this delicious sandwich, but why? Fold it together one more time & it’s perfect! =^..^=

Ingredients For omelette tortilla roll-ups

2eggs

1 mdtortilla
-
someshredded cheddar or other cheese, optional

someprecooked crumbled bacon or sausage, optional

someprecooked sautéed mushrooms, peppers, onions, tomatoes, optional
How To Make omelette tortilla roll-ups

1Preheat a medium nonstick skillet over medium heat. Whisk the eggs together in a bowl. (Does anyone else have this ancient Tupperware bowl? This one has battle scars to prove how well-used it’s been over many decades!)

2Pour the eggs in the center of the hot skillet and push them towards the center in a circle. *OR if you precooked the meat and/or sautéed the veggies, just leave them in the skillet and pour the eggs over them.

3Quickly press down a tortilla on the eggs.

4Cook a minute or two until the eggs are mostly set, then flip.

5Add the cheese (plus any precooked meats & veggies**) in a line down the middle of the eggs, the fold the sides over. (**Unless you already added them in Step #2.)

6Carefully flip once more to melt the cheese.

7Serve with fruit or breakfast potatoes! Enjoy! =^..^=
