Ingredients For breakfast quesadillas

4flour tortillas

2 cmonterey jack cheese, shredded

3eggs, scrambled

1/2 csausage, cooked and crumbled

1/4 cgreen onion, sliced

1/4 ctomato, diced

guacamole, optional
-
sour cream, optional
-
salsa, optional
How To Make breakfast quesadillas

1For each quesadilla: Place 2 tortillas in heated 12-inch skillet (or on a griddle).

2Evenly sprinkle cheese over the top of flour tortillas.

3Place scrambled eggs on top of cheese on one tortilla.

4Evenly distribute the cooked, crumbled sausage over the eggs.

5Allow cheese to melt.

6Top with diced tomatoes and green onions.

7Place second flour tortilla with melted cheese on top.

8Remove from skillet; cut into six equal wedges.

9Serve with guacamole, sour cream and salsa.

10Refrigerate leftovers.
