Ingredients For breakfast quesadillas

6eggs

2 Tbsponion, minced

2 Tbspgreen bell pepper, minced

1/4 tspkosher salt

1/4 tspblack pepper

1/2 cranch dressing

1/2 csalsa

8 ozpackage mexican style shredded cheese blend

4flour tortillas, 10 inch

4 slicebacon, cooked and crumbled

1/2 cdiced ham
How To Make breakfast quesadillas

1In a bowl, whisk together the eggs, onions, bell pepper, salt and pepper. In a separate small bowl, stir the ranch dressing and salsa until combined. Set aside.

2Melt the butter in a large non-stick skillet. Add the egg mixture and cook without stirring until the bottom begins to set.

3Draw a rubber spatula through the eggs, creating large curds. Don't break them up. Continue cooking until the eggs have thickened but are still moist.

4Remove the eggs from the skillet and set aside. Wipe the skillet clean with paper towels.

5To assemble the quesadillas, begin by sprinkling 1/4 cup of cheese over half of each tortilla. Top each half with 1/4 of the scrambled eggs, bacon and ham. Fold each tortilla in half and press lightly.

6Heat the wiped-out skillet over medium high heat. Add two quesadillas and cook 2-3 minutes per side, until golden. Repeat with the second batch. Serve with the ranch dressing mix on the side.
