2 lgripe tomatoes

1onion, finely chopped

1 Tbspolive oil

chopped garlic, to taste

8eggs

salt and pepper, to taste

1 Tbspparsley or mint, chopped
How To Make balbuljata (maltese scrambled eggs)

1Peel, seed and chop the tomatoes.

2Cook onion in oil and a little butter until soft.

3Add the garlic and tomatoes and cook for 5 minutes more.

4Beat the eggs lightly with the salt and pepper and pour over the tomatoes and onions.

5Add more butter if needed. Add parsley or mint and stir continuously over low heat until the eggs are barely set.

6Serve hot.
