I got this recipes from a friend of mine when i was visiting her house.. Loved it!! I changed it a little to fit my taste..

Ingredients For baked red eggs

1 creserved cooked tomato sauce ( my recipe)

4 lgeggs

1/8 tspea of salt and coarse black pepper

2 Tbspchopped fresh chives

1/8 tsppaprika, sweet mild
How To Make baked red eggs

1Preheat oven to 350 f. Spray 4 ramekins with non-stick spray.

2Heat up the tomato sauce, then divide the tomato sauce evenly among the prepared cups. Set aside and cool to room temp, about 15 minutes.

3Carefully break 1 egg in each cup: sprinkle salt, pepper, paprika over eggs..

4Place the ramekins on a baking sheet, and cook until set for about 25-30 minutes. Sprinkle with chives.. Optional add Mexican creme and cheese..
