Ingredients For baked prosciutto and egg cups (low carb)

  • 6 slice
    prosciutto thinly sliced
  • 2 oz
    fresh mozzarella cheese torn into small pieces
  • 3 lg
    basil leaves ,torn
  • 6
    eggs
  • freshly ground pepper

How To Make baked prosciutto and egg cups (low carb)

  • 1
    Coat 6 cups of muffin tin with cooking spray and fit each with a prosciutto slice
  • 2
    Divide half the cheese and basil among cups
  • 3
    Crack an egg into each and nestle remaining and basil around eggs
  • 4
    Bake at 375 until set, about 15 minutes then let rest for 5 minutes

    Season with pepper. Run knife around cups to unmold
