baked eggs
(2 ratings)
These are delicious eggs. This recipe does come from a friend's website, Spend with Pennies. And this is a make what you want guide really, if you only want 2, just make 2, need 6, just make 6, easy peasy. I first made these on 28 Sep 2020 for my parents and I, and we were very impressed! These are delicious eggs that are not tough or rubbery from being baked, the cream is the trick for that. These are easy to make with common ingredients. I cooked these for 18 minutes as I wanted the yolks hard, that time is spot on. I have listed this as a breakfast but I have only served this as a dinner.

How To Make baked eggs
-
1Preheat your oven to 200 C / 400 F. Get out a 12 cup muffin pan and grease the cups with butter. Place a ham slice in each cup.
-
2Crack the eggs one at a time into a small bowl, then slide the egg into the ham slice. (This way you can see and remove any shell fragments before it goes into the ham.)
-
3Add 1 tablespoon of cream to each egg, and sprinkle with salt and pepper as desired. (The cream is what is going to keep the egg white from being rubbery.)
-
4Sprinkle some Cheddar cheese on top of each egg.
-
5Place in the oven and bake; soft yolks: 12 minutes; medium yolks: 15 minutes; hard yolks: 18 minutes, then remove from oven and let rest for 2-3 minutes.
-
6Scoop out each ham slice with a large spoon, arrange on a serving plate.
-
7Serve with your choice of sides, enjoy.
