We ate ours like you would a breakfast sandwich with the top on it....They are so yummy...they would be great with Canadian Bacon on them too... I came across this recipe on Golighlty by Ali this is the website...I added a few things to mine that she did not have on hers.. http://peachbellinibride.blogspot.com/2010_04_01_archive.html It's the whole egg and the toast combo all together in a bowl...I love Eggs Benedict and this reminds me of them... These are so easy to make wouldn't they be fantastic on a brunch buffet for the holiday's? You can use any kind of a crusty roll for these depending on what you are in the mood for or your taste...I love Brioche they are great with whole wheat...

Ingredients For baked eggs in a bowl

12crusty dinner rolls (dozen) white or ww

12 lgeggs (dozen)

1 pinchcilantro (per egg)
-
1 pinchchives (per egg)
-
1 pinchcumin (per egg)
-
1 tspheavy whipping cream (per roll)
-
salt and pepper (to taste)
-
white monterey jack cheese (grated)
- AS MUCH CHEESE AS YOU LIKE
How To Make baked eggs in a bowl

1Preheat oven to 350* on a foil lined cookie sheet Slice off top of each dinner roll and remove some bread until there is a hole large enough for an egg. Place the rolls on the cookie sheet. Set the tops aside. Put an egg in each roll. Top each egg with herbs and a tsp of cream. Season with salt and pepper, add Monterey Jack. Bake in a 350* oven until eggs are set and bread is toasted 30 minutes. After eggs have cooked for 20 minutes, place bread tops on your cookie sheet and bake until golden brown. Let sit 5 minutes.

2Put the tops on rolls and serve warm.
