I created this recipe for breakfast one morning. It may be a simple recipe, but it is not simple in taste. It is made from most ingredients that you have in your refrigerator. This is a high protein dish, perfect for Atkins followers. Enjoy! Recipe and photos are my own.

Ingredients For bonnie's bacon spinach frittata

2eggs slightly beaten

1/2white onion, small dice

1tablespoon olive oil

3tablespoons of cream

3/4cup raw spinach leaves

1/2cup sharp cheddar cheese

1/4teaspoon chipotle pepper
-
2slices of cooked crisp bacon, crumbled

season to taste at the table with salt and pepper if desired
How To Make bonnie's bacon spinach frittata

1Assemble all the ingredients, fry the bacon crisp, cool and crumble. Thin slice the sharp cheese and dice the onion. Saute the onion in a medium non stick skillet in one tablespoon of olive oil over medium low heat until golden brown.

2Add the cream to the onions. Stir for a minute or two until the mixture thickens. This carmelizing will make the onions taste very sweet and give the frittata a nice flavor.

3Add the beaten eggs and chipotle pepper to the mixture.

4Add the spinach leaves.

5Add the cheese slices.

6Turn the heat to low and let the frittata cook until it sets. Add a glass lid after one minute. The frittata is done when the edges turn brown and the mixture is solid.

7Add the bacon, and serve immediately. Here is how it looks! Enjoy!
