Quiche is considered a French dish, however egg custards in pastry were known in English cuisine at least as early as the 14th century!

Ingredients For bacon-mushroom quiche

1pie pastry

8 slicebacon
-
1 smonion, grated
-
4 ozfresh mushrooms

4eggs, beaten
-
1 1/2 cshredded cheddar
-
dashpepper
-
2 Tbspflour
-
1 1/2 cmilk
-
1/2 tspsalt
-
dashred pepper
How To Make bacon-mushroom quiche

1Preheat oven to 375

2Cook and crumble bacon.

3Saute onion and mushrooms in a small amount of bacon drippings until soft. (Onions aren't pictured because I was making it for someone who doesn't eat them)

4Toss cheese with flour.

5Slightly beat eggs. Add Milk, salt, pepper and red pepper to eggs. Fold in bacon and onion into egg mixture, then cheese and mushrooms.

6Pour into unbaked pie shell. Place pie tin on a cookie sheet and bake at 375 for 35-40 minutes.

7Let stand for 10 minutes before serving.
