  • 3 slice
    bacon
  • 4 c
    cold leftover mashed potatoes
  • 2
    eggs
  • 1 tsp
    onion powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground black pepper
  • 1 c
    shredded cheddar cheese

Make sure the mashed potatoes are cold. Ours may have been a little warm because our mixture was slightly sticky. So, we formed our cakes in the frying pan.
  • Frying slices of bacon.

    Place the bacon in a large, deep skillet. Cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes.
  • Crumbled bacon on a paper towel.

    Remove the bacon slices, crumble, and set aside. Leave the bacon drippings in the skillet.
  • Mixing mashed potatoes, eggs, seasonings, crumbled bacon, and cheddar cheese.

    Mix the mashed potatoes, eggs, onion powder, salt, and black pepper together in a bowl. Stir in the crumbled bacon and cheddar cheese.
  • Pan-frying the potato cakes.

    Form the mixture into 8 patties. Heat the bacon drippings over medium heat. Pan-fry the patties in the drippings until crisp, about 4 minutes per side.
