My husband Mike and I run a bed and breakfast and this is one of our most requested recipes. It makes (2) quiches and freezes very well. We serve it with a piece of cooked bacon on top, a cup of fruit, an orange slice, and a croissant. No one goes away hungry.

2 Tbspall-purpose flour

1/2 cmayonnaise

1 Tbspdried minced onion

1 Tbspbutter,melted

1 tspsalt

3eggs

1 1/2 cmilk

110 oz. package frozen chopped broccoli, thawed and patted dry

12bacon strips, cooked and crumbled

8medium fresh mushrooms, sliced thin

2 cshredded monterey jack cheese

2deep dish pie crusts
How To Make bacon broccoli quiche

1In a large bowl, combine the first 5 ingredients. Whisk in eggs, one at a time. Stir in the milk, broccoli, bacon, mushrooms, and cheese.

2Pour broccoli mixture into pie crusts. Bake at 350 degrees for 55-60 minutes or until a knife inserted near the center comes out clean. Let stand for 10-15 minutes before cutting.
