To save time,look for mixed diced bell pepper in the produce section of the grocery store. I think you could make and bake these the night before and just pop in microwave in the morning. (I HAVE NEVER DONE IT THOUGH)

Ingredients For bacon and egg cups

12 slicebacon,crisp cooked and cut crosswise into thirds

6 lgeggs

1/2 cdiced bell pepper
-
1/2 cshredded pepper jack cheese

1/2 chalf and half
-
1/4 tspsalt

1/4 tspblack pepper
How To Make bacon and egg cups

1Preheat oven to 350 F. Lightly spray 12 standard(2 1/2")muffin cups with nonstick cooking spray.

2Place 3 bacon slices in each prepared muffin cup,overlapping in bottom.

3Beat eggs,bell pepper,cheese,half & half,salt and pepper in medium bowl until well blended. Fill each muffin cup with 1/4 cup egg mixture.

4Bake 20-25 minutes or until eggs are set in center. Run knife around edge of each cup before removing from pan.
