I love avocados and breakfast. Ripe olives and tomatoes add a little taste boost. I used large, elongated slices rye bread and was able to fit two eggs on one slice of toast for fewer carbs.

Ingredients For avocado toast with fried egg

  • 4 slice
    hearty whole grain or rye bread
  • 4
    eggs
  • 1
    avocado
  • lemon juice
  • 1/4 c
    sliced ripe olives
  • 2 Tbsp
    minced sun-dried tomato, packed in oil; or chopped roasted red pepper
  • smoked paprika
  • salt, pepper, garlic granules

How To Make avocado toast with fried egg

  • 1
    Mash avocado in small bowl, sprinkle with lemon juice.

    Toast bread.

    Spread each piece with mashed avocado. Add salt, pepper and garlic granules to taste.

    Fry eggs to your preference (I like them over easy, but sunny side up eggs make a better presentation).

    When eggs are done, slide each one on top of an avocado toast. Sprinkle sliced olives, chopped tomatoes, paprika, extra salt and pepper to taste on each egg to serve.
