Ingredients For avocado omelet

  • 2 lg
    eggs
  • 1 Tbsp
    milk
  • salt and pepper
  • 1 Tbsp
    olive oil
  • 1
    avocado, 4 tbsp mashed the rest sliced
  • 1/4 c
    shredded Swiss cheese
  • 4 Tbsp
    cooked and drained black beans

How To Make avocado omelet

  • 1
    Mix the eggs and milk with salt and pepper. Add the olive oil to a skillet, then add the egg mixture, swirling the pan to cover the whole bottom with it. Add the mashed avocado and cheese to one side of the egg.

    Fold the egg over the side with the cheese and avocado. Cook until the cheese melts. Remove to a plate and warm the beans in the mircrowave and top the omelette with the beans and avocado slices.
