I made this with some leftover 4 cheese and spinach mixture. It was really good! I have estimated the measurements, since I threw it all together.

Ingredients For 4 cheese spinach fritatta

  • 1/2 c
    ricotta cheese, low-fat
  • 1/4 c
    parmesan cheese
  • 1 c
    mozzarella cheese, low-fat- divided
  • 1/2 c
    cheddar cheese, shredded
  • 1/2 c
    spinach , squeezed dry
  • 3 lg
    eggs
  • 2
    egg whites
  • 3 Tbsp
    half and half
  • dash
    onion powder

How To Make 4 cheese spinach fritatta

    Mix the eggs, whites and half and half together, then mix everything together, pour into a small nonstick oven-proof skillet that's been sprayed with Pam. You can use a non oven-proof skillet if you wrap the handle with tin foil.

    Over medium heat, cook for about 2 minutes, scraping the sides and bottom. When eggs are mostly set top stirring. Cook for another min. 'til underside sets.

    Top with other half of mozzarella. Place under broiler for 2-4 minutes, or until lightly browned. Remove from oven and let stand 5 min. to finish cooking. Serve in wedges.
