I saw this in a Cooking Light cookbook and was slightly apprehensive to try this. My family is very glad I did, and I have yet to meet anyone who didn't love these delicious pancakes.

Ingredients For oatmeal buttermilk pancakes

1/4 call purpose flour

1 cold fashioned oats, uncooked

1 Tbspsugar

1/2 tspbaking powder

1/2 tspbaking soda

1/4 tspground cinnamon

1/8 tspsalt

1 cnonfat buttermilk

2 Tbspbutter, melted

1 lgegg

cooking spray
-
syrup, butter, fruit (optional)
How To Make oatmeal buttermilk pancakes

1Combine flour, oats, sugar, baking powder and soda, cinnamon, and salt in a medium bowl, stirring with a whisk.

2Combine buttermilk, butter, and egg in a small bowl. Add to flour mixture, stirring just until moist.

3Heat a nonstick griddle over medium heat. Coat pan with cooking spray. Spoon about 2-3 tablespoons batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned. Serve with syrup, butter and fruit, if desired.
