katy's pancake
This pancake never fails to take me back to my childhood and summers at the lake. The recipe was given to my mom by a good family friend (Katy). She brought the recipe with her from Austria. The recipe makes one pancake, but they cook up quick so it's easy to make for a family.

2 Tbspsugar
-
2 Tbspall purpose flour

jam or jelly, any flavor you like

How To Make katy's pancake
-
1Spray a non-stick skillet with cooking spray or melt a small amount of butter. Don't let the pan get too hot.
-
2Mix eggs, sugar and flour. Pour egg mixture into skillet and cook until almost set, lifting edges so all uncooked egg mixture gets underneath.
-
3Flip and cook for about 30 seconds until that side has set (I'm not a good flipper, so I usually just cover the pan as soon as I pour the eggs in so both sides set).
-
4Slide out onto plate and spread jam down the center (as much as you like). Roll up and sprinkle with powdered sugar.
- Last Step: Don't forget to share! Make all your friends drool by posting a picture of your finished recipe on your favorite social network. And don't forget to tag Just A Pinch and include #justapinchrecipes so we can see it too!
