Recipe taken from "Everyday Grain-Free Gourmet" cookbook. I've been making these for months now, each time they come out PERFECT.

Ingredients For gluten and grain-free pancakes

  • 1 c
    almond meal
  • 1/4 tsp
    salt
  • 1/4 tsp
    baking soda
  • 4
    eggs
  • 2 Tbsp
    honey
  • 1 tsp
    vanilla extract
  • cooking oil or spray

How To Make gluten and grain-free pancakes

    Mix all dry ingredients in a small bowl.

    In a medium bowl, mix eggs, honey and vanilla.

    Add dry ingredients to wet. Mix well.
  • 4
    Refrigerate the mixture for 10-15 minutes.

    Warm up a frying pan on high heat with a thin layer of cooking oil or non-stick cooking spray of your choice.

    Fry pancakes about 1 minute on each side, until golden brown.

    Serve with fresh fruits, syrup or honey.
