Ingredients For fluffy vegan pancakes

  • 3/4 c
    soy milk
  • 2 Tbsp
    lemon juice
  • 1 c
    all purpose flour
  • 2 Tbsp
    sugar
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 Tbsp
    melted margarine (earth balance)
  • 1
    egg equivalent (ener-g egg replacer)

How To Make fluffy vegan pancakes

    add lemon juice to soy milk and let sit while you prepare the remaining ingredients
  • 2
    prepare egg replacer. Ener-G directions are to mix 1.5 tsp mix with 2 tbs water - whisk well

    melt margarine and allow to cool a bit
  • 4
    combine dry ingredients together in a medium sized bowl
  • 5
    add margarine to 'egg' and whisk well, then add to soy milk, whisking again.

    pour wet mixture into dry ingredients and mix by hand. Don't over do it! small lumps are ok :)

    Pour 1/2 cup onto heated griddle, cook until bubbly on the edges, flip once cooking for a minute or so and enjoy ! <3
