Ingredients For fluffy vegan pancakes

3/4 csoy milk

2 Tbsplemon juice

1 call purpose flour

2 Tbspsugar
-
1 tspbaking powder

1/2 tspbaking soda
-
1/2 tspsalt
-
2 Tbspmelted margarine (earth balance)

1egg equivalent (ener-g egg replacer)
How To Make fluffy vegan pancakes

1add lemon juice to soy milk and let sit while you prepare the remaining ingredients

2prepare egg replacer. Ener-G directions are to mix 1.5 tsp mix with 2 tbs water - whisk well

3melt margarine and allow to cool a bit

4combine dry ingredients together in a medium sized bowl

5add margarine to 'egg' and whisk well, then add to soy milk, whisking again.

6pour wet mixture into dry ingredients and mix by hand. Don't over do it! small lumps are ok :)

7Pour 1/2 cup onto heated griddle, cook until bubbly on the edges, flip once cooking for a minute or so and enjoy ! <3
