Rhubarb grew so nicely this year. So we have to use it. This is a very good recipe. The muffins are soft and delicious.

Ingredients For rhubarb muffins

2 call purpose flour

1/2 coatmeal, uncooked

1 tspbaking soda

1 tspbaking powder

1/2 tspsalt

1/8 tspnutmeg

3/4 cbrown sugar

1 lgegg
-
1/2 coil
-
1 cbuttermilk
-
1 1/2 cdieced rhubarb

1/2 cnuts or almonds
-
1/3 cbrown sugar

1/2 tspcinnamon
How To Make rhubarb muffins

1Mix first 5 ingredients.

2In a separate bowl, mix brown sugar, egg, oil and buttermilk.

3Add dry ingredients into wet.

4Prepare topping of sugar and cinnamon and sprinkle over each each once in muffin tin.

5Bake at 375 F for 20-25 minutes for large muffins and 15-20 minutes for small muffins.Make 6-8 large or 15-17 small muffins.
