clean-eating vegetable chic-pea tacos
Lately, I have to admit; I've been eating vegetarian style. What I am discovering is 1) I like the taste of veggies, and 2) you can make them taste like almost anything. I made these tacos out of HUNGER ! LOL
I wanted a one pan meal, because I wasnt feeling so good, can't sleep. This is what I came up with. You can use what ever veggies you have around the kitchen. I DID. Do this dish YOUR WAY.

Ingredients For clean-eating vegetable chic-pea tacos
- I USED THESE VEGETABLES, BUT USE WHAT YOU'D LIKE, AND THE AMOUNT YOU WANT
-
onion
-
celery
-
garlic
-
chick peas
-
tomato
-
mushroom caps
-
Tbspchiles, canned and mild
-
handfullbaby spinach
-
taco seasoning mix
-
cumin
-
taco shells
-
salt and pepper (to taste)
How To Make clean-eating vegetable chic-pea tacos

1In nonstick pan add... celary, onion, peppers, (all veggies that take longer to cook)
Cook until tender. -
2Add ALL OTHER INGREDIENTS,
sprinkle with cumin, salt and taco seasoning. -
3Simmer 3 min.
Serve on taco shell (I added a little hummus)
