Took a trip down memory lane yesterday for breakfast with my Nanie's Spiced Apple Pancakes with lots of butter and maple syrup on them. They are also good with a dusting of powdered sugar or with homemade chunky applesauce. I served both blueberry and maple sausages and some scrambled eggs alongside for a hearty breakfast.

Ingredients For spiced apple pancakes

2 call purpose flour

4 Tbspsugar

2 tspbaking powder

1 tspground cinnamon

1/2 tspground ginger

1/2 tspground allspice

1 1/2 cmilk
-
2eggs
-
2 Tbspmolasses, dark

2 Tbspvegetable oil

4 mdapples, diced i used granny smith but any type of apple will work
How To Make spiced apple pancakes

1Peel and dice apples, and set aside.

2Combine the first six ingredients in a medium-size bowl.

3In another small bowl, beat egg, and combine with milk, molasses, and oil until well blended.

4Pour wet mixture into dry mixture and stir until just evenly blended. Stir in apples

5Pour 1/4 cup batter onto a hot, lightly greased griddle. Cook 2 to 3 minutes on each side, making certain center is cooked through.

6Serve with butter and maple syrup, or applesauce, or powdered sugar.
