Ingredients For on the go blueberry pancake muffins

  • 2 c
    heart healthy bisquick baking mix
  • 2
    eggs
  • 1 c
    1% milk
  • 1/2 c
    club soda
  • 1 Tbsp
    canola oil, or vegetable oil
  • 1 c
    frozen or fresh blueberries
  • 1/4 c
    maple syrup

How To Make on the go blueberry pancake muffins

  • 1
    Heat oven to 350. Spray a 12 muffin pan w/ cooking spray. In lg bowl, combine bisquick mix,eggs, milk, club soda and oil. Pour evenly into muffin cups.

    Sprinkle each cup w/ blueberries. Bake about 20 mins, or until a toothpick inserted in center comes out clean. Brush tops w/ syrup.
