Ingredients For light-n-fluffy strawberry/vanilla pancakes

  • 1 c
    all purpose flour
  • 2 Tbsp
    light brown sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 lg
    egg
  • 1 c
    milk, i used 1%
  • 2 Tbsp
    vegetable oil
  • 2 Tbsp
    vanilla
  • 1 c
    chopped fresh strawberries

How To Make light-n-fluffy strawberry/vanilla pancakes

    In lg bowl, stir together flour, brown sugar, baking powder and salt. Whisk in milk, oil, egg and vanilla. Stir in strawberries.

    Spray a lg skillet w/ cooking spray or use a little oil to coat pan. Using a 1/4 cup of batter, pour into skillet, over medium heat. Cook until bubbly.

    Flip pancake over and cook until golden brown. Repeat w/ remaining batter. I always serve w/ strawberry flavored maple syrup for my grandchildren. They love it.
