Ingredients For weekend breakfast burritos

3tortillas, flour -i use https://www.justapinch.com/recipes/bread/bread-flatbread/homemade-flavored-flour-tortillas.html?p=1

1 1/2 cfrozen hash browns, thawed

4tablespoons vegetable oil

1/4 tspsalt
-
6 ozfresh chorizo

3eggs, beaten
-
1 ccheese, shredded -i used a mix of cheddar and pepper jack

How To Make weekend breakfast burritos

1In a medium skillet on medium heat add 2 tablespoons vegetable oil, and salt.

2Add hash browns and cook until golden brown about 5 minutes.

3Flip and add the other 2 tablespoons of vegetable oil and cook until the bottom is golden - another five minutes.

4Remove and keep warm in oven while you finish the burritos.

5Add chorizo to the same skillet. Break down chorizo as you would ground beef.

6When it resembles cooked ground beef add the three beaten eggs.

7Stir until eggs are soft-scrambled. Turn off heat, top with cheese, and cover skillet until cheese has melted.

8Heat tortillas in microwave - about 15 seconds.

9On top of tortillas, add hash browns, chorizo mixture, and a couple heaping spoonfuls of salsa fresca.

10Roll up burrito style and enjoy!
