strawberry basil stuffed french toast
This is especially good with the tastes of strawberry and basil. Lemon basil is extra delish (versus regular basil). I cannot find lemon basil in many stores, but I am lucky because a friend grows her own and she gave me some! Also, I use non-stick cooking spray AND a non-stick pan because dried egg is one of my least favorite things to clean up, so using both is like double-protection!

Ingredients For strawberry basil stuffed french toast

2 slicetexas toast

2 Tbspmascarpone cheese

2 Tbspstrawberry pie filling

2eggs

1/2cup heavy whipping cream

2 Tbsphoney

pinchsalt

5-7leaves of lemon basil, or regular basil, chopped

non-stick cooking spray
How To Make strawberry basil stuffed french toast

1Lightly mix together cheese and strawberry filling. Set aside.

2Whisk together eggs, whipping cream, honey and salt.

3Place one slice of bread into egg mixture. Turn over so both sides are soaked. Let soak for about 40 seconds. In the meantime, spray non-stick pan with non-stick spray. Set heat to medium-low.

4Hold up bread and let excess egg drip off a bit. Place in hot pan, and after about 5 seconds, turn heat to low. Flip over and brown bread on both sides till golden brown.

5In the meantime, place other slice in egg mixture to let it soak.

6Place the done slice on a plate. Top with strawberry cheese and basil. Set aside. Brown the other slice.

7Set the other done slice on top of the strawberry cheese. Done! Enjoy!
