Ingredients For potatoes and eggs

1 lbbaking potatoes, cubed

1yellow onion, coarse chopped

1green bell pepper, coarse chopped

1red or orange bell pepper, coarse chopped

1 boxheat n serve sausage links, rough chopped

6 lgeggs

2 Tbspvegetable oil
-
salt, pepper, and garlic powder to taste

3/4 cshredded cheddar cheese

1/2 cshredded mozzarella cheese
How To Make potatoes and eggs

1In a large mixing bowl, mix together veggies, toss with oil and seasonings to taste (rough guess how much you typically like on your potatoes when frying)

2In a large cast iron or oven proof skillet, sprinkle the chopped sausage links. spread potato mixture on top. Cook for about 5 minutes on med-high heat, scrape up the bottom and stir. Cook until potatoes are almost tender. Top with cheddar cheese. Crack eggs on top. Top with mozzarella cheese.

3Place in a preheated oven at 400, cook until eggs are cooked the way you like, we like the yolk med-hard so about 10 min.
