nothing fancy hash

Threw this together the other morning. So much better than the canned stuff. Either use a can of corned beef or leftover corned beef. Either way it's a satisfying breakfast. Add a couple eggs to the top and dig in. My photos

How To Make nothing fancy hash
-
1Wash, cube and boil potato till fork tender, not mushy.
-
2In a medium skillet over medium - high heat, add oil or bacon grease. When hot, add everything but the corned beef. Saute until the potatoes and veggies are browning.
-
3I leave corned beef pretty chunky, and add to the potatoes. Toss until heated through. Sometimes I smash it down and cook till gets a crispy crust, then flip with spatula to the other side. Today I just tossed with veggies to heat through. Totally up to you.

4Place a portion of hash on a plate. Place your eggs on top. Time to enjoy a flavorful breakfast. I say this feeds 4, but my husband ate the whole pan himself...guess that's a good sign.
