This dish I have been making for years. I learn how to make this from my dad growing up. So you can say its been passed down and today I passed it to one my little girls. So you will see pictures with her doing all the work & the finish dish. She did a great job & I am very proud of her. Now this dish is cooked all in one frying pan. Which is great for the little chefs out there.

Ingredients For my bf calls it egg mess.

    potatoes
  • 4 clove
    garlic
  • 1/4 lb
    meat
  • 1/2
    red onion
  • 1/2
    tomato
  • 1/4 bunch
    cilantro, fresh
  • 6
    eggs
  • 1/4 c
    milk
  • 1/2 bag
    mexican shredded cheese

    This dish was done in one frying pan. Start with peeled potatoes sliced about 1/2 inch. Fry in skillet with oil and cover. Flip the taters till they are golden.

    During the time the taters are cooking you should do your slicing and dicing with the garlic, red onions, tomatoes, your meat (we used corn beef and ham). Once your taters start looking golden side them to the side of the pan then add your meat, garlic onions on the empty side then cover.

    As your taters and meat are cooking now is the to!e to start scrambling your eggs and milk. Go back to your pan and flip your meat once it looks like its cooking down then flip the taters and meat together till mixed. ( there is pictures to show how she did it)

    Once mixed side it to the side and add your eggs to the empty side and cover. Now while this is cooking this gives you time to clean up your area☺ after you have cleaned up time to pull out the cheese and flip your egg as. Once they start looking close to done its time to flip the eggs into the meat & taters. Once mixed that way the add on top the tomatoes and cheese then cover on lowest heat you can have. While your cheese is melting finish your clean up and pull out your plates to set. After cheese is fully melted turn heat off and plate. Toast and Oj with your plate. Its a perfect breakfast for anytime of the day. Enjoy
