1/2 cegg whites, i use eggbeaters

1 tsponion, finely minced

1mushroom, chopped

1/4 cfresh spinach, chopped (about 12 leaves)

1 Tbsplow fat cheese, shredded

pepper, to taste
How To Make healthy omelet on the run

1Mix all ingredients in a very large microwave safe mug.

2Microwave for about 3 minutes (my microwave is low watt you may need more or less time depending on your microwave).
